Raspberry Yogurt Muffins

These fluffy and delicious mini muffins are the perfect snack for you and your little ones!

Ingredients

  • 2 eggs
  • 1/2 cup almond milk
  • 1/3 cup coconut sugar
  • 1/2 cup plain greek yogurt
  • 2 tsp vanilla extract
  • 1 tbsp baking powder
  • 1 cup all purpose flour
  • 1 cup almond flour
  • 1 cup fresh washed raspberries

Instructions

  1. Preheat oven to 350 F
  2. Place all of the wet ingredients into a bowl and mix until fully combined ( no clumps in the batter)
  3. Add in your dry ingredients and mix until just incorporated
  4. Add raspberries leaving a few out for topping the muffins.
  5. Mix until just combined
  6. Scoop the batter into the mini muffin tin and top each muffin with 1/2 of a raspberry
  7. Bake at 350 for 12-15 minutes or until a toothpick comes out clean when stuck into the middle of the muffin!

Notes

  1. You can sub 1 cup of flour for the almond flour
  2. You can sub 1:1 white sugar for coconut sugar
  3. You can sub 1:1 milk for almond milk
