Raspberry Yogurt Muffins
Raspberry Yogurt Muffins
Yield: 24 mini muffins
These fluffy and delicious mini muffins are the perfect snack for you and your little ones!
Ingredients
- 2 eggs
- 1/2 cup almond milk
- 1/3 cup coconut sugar
- 1/2 cup plain greek yogurt
- 2 tsp vanilla extract
- 1 tbsp baking powder
- 1 cup all purpose flour
- 1 cup almond flour
- 1 cup fresh washed raspberries
Instructions
- Preheat oven to 350 F
- Place all of the wet ingredients into a bowl and mix until fully combined ( no clumps in the batter)
- Add in your dry ingredients and mix until just incorporated
- Add raspberries leaving a few out for topping the muffins.
- Mix until just combined
- Scoop the batter into the mini muffin tin and top each muffin with 1/2 of a raspberry
- Bake at 350 for 12-15 minutes or until a toothpick comes out clean when stuck into the middle of the muffin!
Notes
- You can sub 1 cup of flour for the almond flour
- You can sub 1:1 white sugar for coconut sugar
- You can sub 1:1 milk for almond milk
