Blueberry French Toast Muffins

These fluffy and moist french toast muffins are the perfect make ahead weekday breakfast for those busy mornings, and a great premade option for your little ones, with no added sugar!

Ingredients

  • 8 Slices white soft sourdough or french bread
  • 5 whole eggs
  • 2 tsp cinnamon
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 cup blueberries

Instructions

  1. Preheat oven to 350 F
  2. Cut the bread into 1 inch cubes and add to a big bowl
  3. In a small bowl whisk together the eggs, vanilla, milk, applesauce and 1 tsp cinnamon
  4. Pour liquid mixture over bread and mix until combined
  5. Add in the blueberries and mix
  6. Scoop french toast mixture into a greased muffin tin, make sure to pack each muffin in with mixture
  7. Sprinkle each muffin with cinnamon and a few blueberries
  8. Bake for 20-25 minutes or until the tops are golden brown
