Blueberry French Toast Muffins
These fluffy and moist french toast muffins are the perfect make ahead weekday breakfast for those busy mornings, and a great premade option for your little ones, with no added sugar!
Ingredients
- 8 Slices white soft sourdough or french bread
- 5 whole eggs
- 2 tsp cinnamon
- 1 cup milk
- 1 tsp vanilla extract
- 1/2 cup unsweetened applesauce
- 1 cup blueberries
Instructions
- Preheat oven to 350 F
- Cut the bread into 1 inch cubes and add to a big bowl
- In a small bowl whisk together the eggs, vanilla, milk, applesauce and 1 tsp cinnamon
- Pour liquid mixture over bread and mix until combined
- Add in the blueberries and mix
- Scoop french toast mixture into a greased muffin tin, make sure to pack each muffin in with mixture
- Sprinkle each muffin with cinnamon and a few blueberries
- Bake for 20-25 minutes or until the tops are golden brown
