Apple Pie Oatmeal Bars

Caramelized apples folded into a slightly sweet oatmeal base and baked until golden brown to make the perfect fall treat!
Ingredients
- Apple Pie "Filling"
- 2 diced pink lady apples
- 1 tbsp brown sugar
- 1 tbsp butter ( for melting in the pan)
- 1 tsp vanilla extract
- 2 tsp cinnamon
- Bar Base:
- 2 cups quick oats
- 1 tbsp baking powder
- 2 tsp cinnamon
- 1/4 tsp salt
- 1 cup milk
- 1 egg
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350 F
- In a bowl combine diced apples, 1 tsp vanilla extract, 2 tsp cinnamon and 1 tbso brown sugar.
- Add 1 tbsp of butter to a pan and heat up.
- Add the apple mixture to the pan and saute for 5-8 minutes until caramelized and tender
- In a bowl combine the oatmeal bar base ingredients and mix together.
- When apples are done cooking, combine them with the oatmeal mixture, leaving a few out for topping.
- Pour batter into an 8x8 baking dish and top with remaining apples.
- Bake for 25 minutes or until top is form to the touch.
- Let cool completely before slicing into 12 bars.
