S’mores Oatmeal Bars
S'mores Oatmeal Bars
Yield: 12 bars
These slightly gooey, chocolate filled s'mores bars are the perfect make ahead snack for those busy weeks and can be placed in the freezer for up to 3 months!
Ingredients
- 2 cups quick oats
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 3 tbsp sugar
- 2 eggs
- 1 cup almond milk
- 1/4 cup mini marshmallows
- 1/4 cup chocolate chips
- 1 graham cracker sleeve
Instructions
- Preheat oven to 350 F
- In a bowl mix together 2 eggs and 3 tbsp sugar and beat until creamy.
- Add in vanilla, salt, and baking powder and mix together.
- Add in quick oats and milk .
- Once combined, add in the chocolate chips, graham cracker, and marshmallows and mix until combined.
- Pour into an 8x8 baking dish and top with extra chocolate chips, graham cracker pieces and marshmallows.
- Bake at 350 for 23-25 minutes
Notes
- You can swap water or milk for the almond milk in a 1:1 ratio
- Maple syrup, coconut sugar, monkfruit, and white sugar all work in 1:1 ratio
- Applesauce can be subbed for sugar but it will be slightly less sweet
