High Protein Spinach Artichoke Dip

With 16 grams of protein per serving, this dip is bound to be a crowd favorite. Creamy from a mixture of cottage cheese and yogurt with a topping of mozzarella that bubbles to perfection when baked.

Ingredients

  • 1/3 cup plain greek yogurt
  • 1 1/3 cup or 200 grams of low fat cottage cheese
  • 2 tbsp minced garlic
  • 1/4 cup parmesan cheese grated
  • 1/4 mozzarella cheese
  • 1 bag of frozen spinach that has been thawed and drained
  • 1 10 ounce drained can of artichokes
  • salt and pepper

Instructions

  1. preheat oven to 375 F
  2. In a bowl add your frozen spinach and place in the microwave for 1 minute to thaw.
  3. Take out and press all of the liquid out using a towel or a strainer.
  4. In a blender or food processor add your cottage cheese and blend for 10-15 seconds until creamy.
  5. In a bowl add your garlic, yogurt, parmesan cheese, and cottage cheese. Mix until incorporated.
  6. Add in your artichokes and spinach and mix until until combined.
  7. Place in a medium size baking dish ( no bigger than 8x8) and sprinkle with mozzarella.
  8. Bake for 20 minutes until golden brown.
