No Sugar Apple Cinnamon Muffins

These mini muffins are the perfect no sugar added snack for your kids, or yourself!

Ingredients

  • 3/4 cup white flour
  • 1/4 cup unsweetened applesauce
  • 2 tbsp coconut oil melted and slightly cooled
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 of a red apple shredded with skin on

Instructions

  1. Preheat oven to 350 F
  2. In a bowl add your egg, slightly cooled coconut oil and applesauce and mix together
  3. Add in your baking powder, baking soda, cinnamon and vanilla extract and mix
  4. Add in your flour and combine
  5. Add in your shredded apples and mix until just combined
  6. Scoop into a sprayed mini muffin tin ( will make 16 muffins)
  7. Bake for 10-13 minutes ( mine take about 12 but every oven is slightly different!)
